VEGAN White Bean Chili Ingredients • ¼ cup oil • 2 large onion, chopped • 2 cups chopped red bell sweet peppers (about 3) • 4 cloves garlic, minced • ½ cup quinoa, rinsed • 1 (15 ounce) can white kidney beans, rinsed • 1 (15 ounce) can 6-beans mix, rinsed • 4-6 cups vegetable broth / water • 4 teaspoons dried oregano • 6 teaspoons ground cumin • 1 teaspoon salt • 2 teaspoons ground coriander • ½ teaspoon ground pepper After 20 mins, add for 5 mins: • 2 large zucchini, diced (about 3 cups) • ¼ cup chopped fresh cilantro • 3 tablespoons lime juice DIRECTIONS: • Heat oil in a large pot over medium heat.. Saute onion until clear. • Add garlic & peppers. Saute until soft 5min • Add quinoa, oregano, cumin, salt, coriander and pepper, 4-6cup veg broth and beans. Bring to a boil. • Reduce heat to a simmer for 20 minutes, until quinoa done. • Add zucchini, cooking about 5 more mins. • Stir in cilantro and lime juice at end. • Serve with lime wedges, if desired.
