Egghead Flan

This is objectively the best flan you will ever eat. Do not worry about the amount of eggs the recipe calls for, it will not taste eggy at all, and it will have the nicest consistency. It is definitely not healthy but it at least has a lot of protein.

This serves 8 to 10 people


  1. 14 eggs
  2. 2 cans condensed milk
  3. 2 cans regular milk (use the empty condensed milk cans)
  4. 1 tablespoon vanilla extract
  5. 9 tablespoons granulated sugar
  6. 1 tube cake pan (adjust baking time if you don’t have one)
  7. 1 large pot that can hold the tube cake pan (for a bain-marie)


Put the granulated sugar on a regular pan over medium heat, stirring constantly until it starts to dissolve. Keep stirring or moving the pan over a lower flame until it’s fully dissolved but not burnt. Evenly distribute the caramel over the bottom of the cake pan.

Vigorously mix the eggs, condensed milk, milk, and vanilla extract until the mixture is homogeneous. Pour evenly throughout the cake pan. Tightly cover the cake pan with aluminum foil

Bring water to a boil in the large pot and place the cake pan inside for the bain-marie. It should take 30 to 40 minutes to cook, or until a stick inserted into the center of the flan comes back dry.

Scrape at the sides of the flan before flipping onto a serving tray. You must let it cool in this position so that the caramel can seep through the entire thing.

This is a great recipe for chocolate chip cookies, slightly modified from u/morganeisenberg’s recipe on reddit.

Serves ~8-ish hungry people. No weight measurements, but come on, it’s just cookies.


  1. 2 cups + 2 tablespoons white flour
  2. 2 teaspoons cornstarch
  3. 1 teaspoon baking soda
  4. 1 teaspoon salt
  5. 2 sticks (180 grams) unsalted butter
  6. 1.25 cups brown sugar (some of this can be granulated sugar for a crispier result)
  7. 2 large eggs
  8. 2.5 teaspoons vanilla extract
  9. 2 cups dark chocolate chips, plus a handful for topping

Making the Dough

Whisk together the flour, cornstarch, baking soda, and salt in a bowl. Set aside for later.

Fully melt the butter (1 minute in the microwave plus some stirring). While it cools, put the sugar in a large bowl.

When the butter is about body temperature, beat the butter and sugar together for about one minute. Then, add in the eggs and vanilla extract and beat until you have a homogeneous mixture.

Slowly add the dry ingredients while mixing until there are no clumps left. Finally, add the chocolate chips.

Cover the dough with plastic and leave in the fridge overnight for best results. If that’s not possible, chill for at least 1 hour.


Pre-heat the oven to 170° C or 350° F. You do not need to grease the baking sheets if you added the specified amount of butter.

Roll the dough into balls that are between a ping pong and tennis ball in size. Tear the balls in two, and put the rugged side of each half facing up on the baking sheets, make sure the cookies are not too crowded.

Bake until the edges are golden (not brown!) and the cookie has deflated. After pulling out of the oven, use a spatula to scoop the cookies onto a serving plate so they don’t burn.

Push the leftover chocolate chips into any cookies that look like they need it while they’re still warm and soft.

Hoy me disloqué el brazo por cuarta vez, estaba optimista que después de la terapia de recuperación quedaría más macizo, pero obviamente no.

Estoy preocupado de cuándo pasará otra vez, porque seguramente me iré por cirugía cuando eso pase. Pero bueno, 6 meses de terapia no es tanto si suponemos que quedará bien.

Seguiré haciendo deportes que me gusten; con más cuidado y con un soporte del hombro. A fin de cuentas el hombro ya está jodido.

Just a little bit longer.

Today I finished watching Sonny Boy, and it quickly became one of my favorite pieces of art. The main thesis is self-evident and mundane: You can’t go back to how things were. However, the abstract and surreal storytelling in Sonny Boy carved this idea into my bones in a way I hadn’t experienced before, at least from something that wasn’t my direct experiences. The difference between understanding and grokking.

The ending left a heavy but hope-filled emotion behind. I’m sure this is related to an overall anxiety about the future and doubt about recent career choices. The end of the long trip with Her also felt like waking up from the greatest dream, and I’m worried about when or if that will become my real life.

But hey, our lives are only beginning. What lies ahead will take just a little bit longer.
